When I'm in the dimension Promenade of the Condemned everything work perfectly fine but whenever a protector spawn near me the game instantly crash.

Either update Mine Cells to the latest version (both for 1.19.2 and 1.20.1), or downgrade Fabric Loader to 0.14.x
