I have genuinely no idea why this happens or why only with the stone variant of copper ore.
Log doesn't have anything noteworthy:

Note Model Gap Fix works on 1.20.2 despite not being marked as such on Modrinth. You can download from CurseForge if you wish, the issue still happens.
ModernFix replaces the texture stitcher with a faster algorithm, so textures might be placed in different locations on the atlas. However, I don't think this should cause incorrect rendering by itself, so it seems likely that one of the other mods has a bug with certain texture placements.
If it's of any use, the issue appears to have very similar symptoms to an issue that was fixed in Sodium a while back.
Thanks. The issue doesn't happen with the faster texture stitching mixin disabled. That's more of a workaround than a solution to anything, though.
