After reviewing the crash report more closely, it appears that you're using Farmer's Delight Refabricated version 1.21.6-3.2.1+refabricated on your instance or server. The report suggests that this mod version is causing the issue, it's related to how the knife item works.

To resolve this issue, I recommend updating Farmer's Delight Refabricated to the latest version: 1.21.6-3.2.3+refabricated. I've tested this version, and everything works perfectly with it. If you still have issues, please send the crash log again so I can take another look.
