It feels like I'm always having to go through trial and error to know whether or not a minecart is going to fast to make a turn when I'm making a cool build in creative. I think it would be a good idea to have the derailing feature be something you can toggle off in config or as a gamerule.

and you mean "too" fast, not 'to fast'.
