Lots of blocks finally got a tool assigned to them in 1.16, pistons being one of them. Mining pistons with a pickaxe on a 1.15 server is very weird. The block vanishes, then reappears and then drops as an item. This also applies to blocks like kelp blocks, haybales, sponge, nether wart blocks and leaves if you're using a hoe on them.
