I use 1.21.8 fabric and I can't craft the green enchanted crafting table,maple,redwood etc. Its giving me vanilla crafting table when i tried. But I can craft the blue enchanted crafting table actually idk why?

So this is a known issue, since our recipes attempt to overwrite vanilla it kinda just comes down to luck on which loads faster, I can look into more to see if there is something I can do but most likely you'd need something like JEI or REI to force pick that recipe
