The ability to mount entities doesn't allow you to trade with villagers, or interact with entities that may require you to right click them to properly use one of their features (e.g. when you die with the Corpse mod you are unable to retrieve your inventory as the Mouse.)
I suggest an ability to toggle this feature.

Having this issue with the Corpses mod too, though I hadn't thought about it affecting villagers.
A better way to filter what entities are rideable is needed, or a way to manually toggle it on/off.
