I think it would be great if we had the ability to configure which ores can spawn in the Ore Boulders.
We've started a server without knowing about this feature and most of us had full diamond sets after about 20 minutes of playing, so even though I get the purpose of it, it can break progression quite a bit.

They are configurable. You can either turn them off via the config, or adjust how often / with what ores they spawn used configured / placed feature configs. This is a vanilla minecraft thing configured via datapacks.
