I'm having an issue where config files do generate but they are always blank, all of them: client, common and server.

I also tried opening config with a different text editor, deleting them so they generate again, isolating the mod, and using a different phc2foodcore version.

Foodcore version: pamhc2foodcore-1.18.2-1.0.3
Forge version: 1.18.2-forge-40.2.17

Did a quick test on 1.20.1 and now there are no config files at all. Did they got removed? I always liked hardcore food values and wanted to use them :(
