Items made show as just a big missing texture cube, dumping the components on the client side shows the only custom model thing is "CustomModelData", which I've confirmed works in singleplayer, I am very confused

You likely didn't setup your mod correctly (either on resourcepack or code front). Suggest checking how other mods handle it
