When using the 1.21 crafter it will always place in an upright position and the orientation can't be changed, this is problematic for several auto crafting systems In this example the items should be output to the chest on top of the crafter but because the orientation of the crafter cannot be changed the items get stuck in the hoppers

I was able to get around this issue by placing an output chest to the side of the crafter instead of on top of it for this particular design

quark doesn't let you put the crafter looking up or down, it's like that by design (by looking I mean the face looking side)
