Would be great if foodtips were to display saturation values as well as food values.

Showing saturation values is not a feature in Quark, so this is not a bug.

That aside, this feature was requested on the subreddit 8 days ago, and already declined by @Vazkii because saturation is a hidden mechanic in the game
