Does this mod add the ability to have ores on different stone variants? E.g. if a vein generates in the nether or end will it be netherrack/end stone ore or is a mod adding those ores necessary?

This mod does not add any new ores, no. You are free, if the ores exist, to make veins that spawn in whatever blocks you want, see the readme for all configuration options.
