Simply steel makes an interesting modification of removing the usual Flint and Steel recipe and the vanilla recipe will give you instead a Flint and Iron. This Flint and Iron has a 50% chance of lighting. It does not seem to work as an ignition source when used on unlit torches. I feel like that 50% chance makes things more immersive.
