Time-stamping log entries (even better: a config option to enable/disable timestamps) would be helpful for identifying where in the log file to focus based on a player reporting lag at n time.

If there's gonna be a config, might as well also have an enable/disable setting for logging to allow redshark to remain installed but only be logging when we need logs.
