We are trying to introduce the ribbits to the Legendary Edition modpack but unfortunately we have detected an issue with the Easy NPC mod.

This part specifically :
[18:28:24] [Server thread/INFO] [minecraft/LivingEntity]: Named entity RibbitEntity['Grandma Croak'/742994, l='ServerLevel[world]', x=-2674.75, y=70.00, z=1161.31] died: Grandma Croak was killed

The issue might be coming from the RibbitData here :

It's not an actual server crash, but it disconnects players from the servers due to some nbt data that appears to be "invalid" to minecraft
