Currently if you put sugar in a pressing bin you get sugar and water, which is unrealistic. Instead you should get sugarcane juice from pressing the sugarcane, which can be evaporated into sugar in a drying basin, filled in a bottle and drank, or brewed in a barrel to produce rum.

This was literally the first thing that popped into my mind when I read through the feature list of the crushing tub. Glad I'm not the only one :)

This would also conveniently give the evaporation basin more than just one use.
