When I open settings of the Sword Art Online UI mod, it says "default UI, default inventory" and e.t.c. The question is : After I enable "Default UI", how do I get SAO UI back?

I agree the UX isn't the best for that.
You need to go to your config folder and edit the saoui config. There'll be options with names similar to that of the options (in the UI category).
