Would be super awesome if we could edit Book and Quill that are placed on Lecterns. Then we can make guest books and other fun use-cases.

I'm quite certain you can already do this. If I'm mistaken then it's probably from the fantastic Amendments mod by the creators of supplementaries, which also adds the ability to change font and ink color when writing books in a lectern. It is compatible with scholar in my experience.
