1.12.2: All blocks look like stone with newer optifine versions

Is there any way to edit my optifine options in newer ones to allow them to work? as it is part of the server modpack my group uses, and removing optifine's newer versions would be a no go.

To clarrify, The version of optifine we are using is OptiFine_1.12.2_HD_U_G5.
