Vertex sorting optimizations break the rendering of the debug profiler

I've bisected the broken debug pie to be caused by the vertex sorting commit.
Description
The debug pie (F3+1) is broken and glitchy if commit d74e421 is present. See user reports here. Image taken from the initial user's report.
Reproduction
- Open a world
- Press F3+1
- Observe broken debug pie
Environment
Reproducible on 1.21.4, have not tested other versions. Cross-platform reports (macOS + amd, windows + amd, windows + nvidia) are available.
