Defeating the Ender Dragon will reset the players hearts back to default. (version 1.3.2 for 1.16.4+)

When you enable Carrot Edition, defeating the Ender Dragon and then returning to the overworld will cause the players hearts to be reset back to the default value.

This also seems to affect any subsequent returns from the end via the vanilla portal.
