I have the tree harvester on my server, with the sneak enabled, meaning you have to sneak for it to harvest the tree. I've noticed that sometimes you will have to sneak and chop a log and then stand and chop for it to harvest. And then other times it will just work when you sneak and chop. I recorded a video to show whats happening. I even showed that if you stand and chop first it will act normally and not harvest.
I'm gonna comment this in the same thread because it fits the title, I'm on the newest mod version of 1.21.4 (and fabric 0.16.12) and I have sneak to harvest disabled, but when mining mushroom trees it gets very buggy
Buggy is the best way I can describe it because I can't seem to find a consistency in the issue other than when you try to chop the stem of the mushroom the block (typically) just comes back and nothing happens, but if you crouch and chop it (with sneak to harvest disabled*) it harvests pretty consistently
