When travelling though a nther portal, you can see the temperature orb reset to neutral, but the actual temperature stays, so you can go into hyperthermia by getting out of the nether and walking near a lava source, even though the ord looks grey.
I think the orb should be updated immediately when changing dimensions or teleporting in general.
