I think a toggle to only break fully grown crops would be amazing to have

and something similar for full-grown amethyst clusters

And also to block the breaking/mining of Budding Amethyst blocks (I just broke two in one day 😭)

There is a Block Type Breaking Restriction tweak in the latest build that is on my server (not on CurseForge yet), which can prevent you from breaking Amethyst Buds.

But that feature is currently not block state sensitive, so it can't distinguish between fully grown things. I think that would probably be a separate tweak, maybe? Or maybe not, I might just have to change the black-/whitelist stuff to work entirely differently to allow it to be configured as per-block black-/whitelist of states. But that feature will most likely only arrive via the main development version from 1.12.2, so it won't be any time soon.
