O boi i have a lot of suggestions actually, i hope you will add at least some of them!
there are quality of life, and just helpful stuff i suggested here:

Edit: ok yes i realised some are not possible by a mod like probably, like the disable sound limit.
-Disable targeting for listed entities
-insta-unsprint when sprint button is not held down
-freecam speed presets
-dont send click when no block-entity is targeted (it would be nice if we could also configure that it should ignore click on blocks or entities or both or on listed blocks-entities)
-disable shovel path tweak
-time left to break block timer
-tweakDisableBossbar
-tweak: dont make hand invisible in F1
-disable block targeting (with list)
-hold a specific button with key combination (for example: N+W: it will hold W)
-disable specific sounds in list
-disable sky color change when lightning appears
-tweak: disable 256 sound limit (or increase)
-tweak: disable loading screen after leaving server with resource pack
-preload nether/end before entering portal (probably only would work for singleplayer)
-arrow/trident path predictor
-ability to make specific sounds louder
-tweak: max rendered (exact same tpye of) entities in one block
-some type of indicator if next hit is a crit
-disable shulker box heads (when invisible, or always)
-automine listed blocks
-maximum darkness smooth lighting can make (it could really make visibility a lot better)
-disable specificly named mobs from getting targetted (to prevent hitting your pets)
-disable bat rendering, targeting and sound
-disable arrow/trident throwing if it would end up in the void
-outline items you dropped, from mobs you killed or blocks you mined (you get the idea)
-disable own footstep sounds
-play damage sound from the source of damage
-mob alert (alerts when a specific mob is nearby)
-alert for if you look at a block you would break and it would release lava/water
