I use a qwertz layout and if I try to bind my Y-key to a option, it shows as Z and then in-game if I press y nothing happens, so to be able to use the y key i have to bind the Z-Key.

This is a bug/limitation of the OpenGL input library used by Minecraft, IIRC the vanilla keybinds screen suffers from the same issue.
