This second picture was taken on a full moon.

Additionally I am only able to interact with/harvest the crop during the moon phase directly following the new moon, waxing gibbous. It also only seems to grow during this time.

have to wonder if there'll be some interactions with other mods that also uses the moon phases...astral sorcery maybe?
