I really like the customization of this mod but in v2 it was pretty trivial to just set the gravestone to be a connected wall block. Is there an easy way to do that in v3 or do I pretty much have to make a custom model file for that now?

Yeah you need to write a model file. You can look at barrel one for example, as it's closest to just a block
