I just want to know if there's any way to tame tortoises? What do they eat etc etc. Latest version of the mod.

No current way to tame tortoises. If you just want them to not despawn, picking them up and placing them will set them to never despawn
They have Apples set as their favourite food, for breeding purposes (if enabled in the config)
