Question about Disabling mobs (and a little extra)

I've already read that it is used through Datapacks, however i haven't able to have any success in trying to make one my self, I'd love to know how to.
Note: I am aware on how to modify stuff inside a Zip file and the lines in the wiki, however i have yet to understand how to make my own Datapack, i have 0 experience on it.
There was one Closed issue that had a Hyena Datapack that essentially removed them. I used it to remove the mobs i wanted to disable, however i'm afraid it might not work with newer versions of the mod. ¿May i bother with a walk through?
¿And is it possible to remove one variant of a certain family? As for example: removing a tiger from the big cats.
I apologize on advance if this was a waste of time. :,)
(Edit: I managed to look into the files of the mod, and thought about adding extra sounds and textures for a personal resourcepack, ¿Is it possible? )
