I thought it would be possible to infect myself with Sanguinare Vampiris using the Sanguinare Injection. However it proved to not be possible. Considering it is used to stop being a Vampire Hunter, I feel that it should be capable of infecting the player with Sanguinare Vampiris if the player is only human.
