In the "Edit Server" menu, a button that allows the user to change their "version" for that specific server would be appreciated.

There is no other mods I've seen that do this.

I use ViaFabric on Minecraft 1.21.4, the mod version is 0.4.17+100

Already possible with the domain trick, Use the example: minigame.example.com._v1_16.viafabric to tell viafabric that the minigame server requires 1.16 as protocol version.
