Woodwalker causes issues with mobs from other mods (I expected that, but not whole save corruption)
Is there a way to delete (or even, edit) the mod's data without wiping all player data?

Using tools like NBTExplorer you can delete/edit the "CurrentShape", "UnlockedShape", "RemainingHostilityTime" and "AbilityCooldown" tag.
