What happened?

Modded wooden planks are generally unable to be used to craft Crafting Tables. I did not attempt all modded logs, but known planks which are affected include: Regions Unexplored's Redwood Planks, Ars Nouveau's Archwood Planks, Deeper and Darker's Echo Planks, Productive Tree's Firecracker Planks, and Allthemodium's Soul Planks.

This appears to be a result of a recipe change making it so the Crafting Table recipe only accepts items with the #minecraft:vanilla_planks tag, in contrast to a recipe like sticks which instead use the #minecraft:planks tag.

I agree this should be fixed with a rather high priority. Any new player that spawns in a modded biome will be frustrated to craft the first item you need.
