After some time playing, you can't interact with objects, and then a few moments later Minecraft goes dark and then kicks you out of the server with a "Timed out" error. Most of the time there are no errors in the console, but I did catch a
"[Worker-Main-7/ERROR]: Caught exception in thread Thread[Worker-Main-7,5,main]
java.lang.NullPointerException: Cannot invoke "net.minecraft.world.level.chunk.DataLayer.m_62560_(int, int, int)" because "???" is null" at one point - dunno if that's relevant.
