Repeating Issue: Internal Exception: java.net.SocketException: Connection reset

(This is going to be a bit long sorry but I've tried everything including suggestions from Mitchell, Yumi, etc. to no avail)
Issue Description: When attempting to join the Official ATM7, I load in briefly before getting timed out with the following error:
Internal Exception: java.net.SocketException: Connection reset

This started 2 days ago, spent about 6 hours with no avail fixing, was not an issue yesterday, and now is an issue again.
Me (Discord: Parsalmon#1468) and one other discord user in #atm7-help on the discord (Discord: SaintofIdiocy#7220) have had this problem, which started for them earlier today on a different random ATM7 Server. I have been able to play a new singleplayer world fine.
My attempts to fix issues (Roughly in order), starting 2 days ago
- Restart Game Client (ofc)
- Repair Game Client
- Delete random clientside player data files, then repair (uninformed on that aspect, it was a random attempt)
- Completely delete the instance and backups (both manually in file explorer and through Curseforge's delete button), then reinstall
- Restart PC
- Tested singleplayer world, generated, loaded in, etc (no issues with singleplayer)
The following day (yesterday) it worked. My initial attempts to fix that day were on my laptop, a different computer to the one where I had the initial problem. The new developments were:
- Server restart happened overnight (IIRC)
- Got EnigmaQuip to empty my inventory to a teammate while I was offline
- Installed Curseforge and ATM7 on my laptop (on mobile data) and joined the server, it worked fine. No issues there
- Went home, joined on my PC (Using my main internet) and it worked fine for that day
- Quit the game before leaving, PC put to sleep, did not restart or loose power or anything (incase relevant)
Today, It's broken again:
- Launched the pack on my PC again and was met with the same issue.
- Restarted PC and Router/Modem (both?), did not help
- Restarted and tried on the same mobile data which I joined initially on my laptop, same issue again
- Tried removing the 'JER' mod from a suggestion by Mitchell, same issue exactly as before.
Ok I think thats all the relevant information, sorry I know this is long but uh yeah... I'll try and include the logs in as much order and context as I can remember from when I posted them to discord. Please, so far no-one has been able to figure this out.
The only thing the discord to server in-game chat shows, despite me typing in the chat before disconnecting.

This video is from today after a few attempts, but it happens almost identically every time. The only difference is that sometimes the world around me doesn't even render in.
Logs:
(First failed joins, after restart and after update) latest.log

I followed this (below) advice, specifically the comment that the mod response references. This appears has to have fixed the issue now for at least yesterday and today.
Further Attemptted Fixes:
- Setting Render Distance, Simulation Distance, Smooth Lighting, and Graphics all to their minimum.
- Using the cmd commands
ipconfig/release
,ipconfig/flushdns
, andipconfig/renew
- Uninstalling LogMeIn Hamachi
- Disconnecting from the Zero Tier One network I was on
- Change my DNS server to 8.8.8.8 (Prefered) and 8.8.4.4 (Alternate)
- Checked and the java instal curseforge was using was allowed through C:\Users\Parsalmon\curseforge\minecraft\Install\runtime\java-runtime-beta\windows-x64\java-runtime-beta\bin\javaw.exe
-Using the cmd commandsnetsh winsock reset
andnetsh int ip reset
followed by the previous three, restarting my pc.
So far none of these have had any impact
Update:
I managed to join successfully on my laptop (Same internet as PC, wifi vs ethernet but that shouldn't be relevant)
Log from the successful join on laptop: latest (3).log
Then I tried to join on my PC again, and got the same issue, heres the log: latest.log
At this point, my remaining ideas are that it's either the java version, as I installed adoptium on my pc a while ago, or that it's some network config/firewall setting. I will try completely reinstall java and Curseforge on my PC, but if it's a network issue I don't know where to even start.
