I can pick up chests and hoppers but not mobs and I have tried several different key binds and was wondering if it was because of incompatibility with other mods?

The ability to pick up mobs is intentionally disabled in the config. You can re-enable it by going to carryon-server.toml in your world or defaultconfigs folder and changing useWhitelistEntities to false.
