Due to an issue on Blizzard's side changeing the race/sex of a character model does not change the skin from the current character's. This make a very wierd looking model. To "fix' the issue changing race/sex sets the model to use the "Trasmog Shadow Skin". Hopefully the Shadowlands prepatch will fix the issue or allow for some other work around.
