I would like to suggest having a section specifically for deleting items and not having whether or not something is deleted be a part of the general "junk" section.

Let's say I have two items in my bags, a Hearthstone and some other item worth 100g. If both are on inclusion and then I start shift right clicking the minimap icon I'll lose 100g.
With my suggestion only the Hearthstone would be deleted, assuming I hadn't added the other item to the delete list.

My feelings on this topic is that junk is junk. The destroy button (via minimap or keybind) doesn't have to be pressed blindly if there's any fear of losing gold. It would be better to destroy items using the junk frame in those cases, in order for visual feedback:
