There's several mobs that see stealth that aren't tagged as such. I'm pretty sure there are more, but the ones I can confirm by stealthing through dungeons myself solo are:

Halls of Atonement: Vicious Gargon (id 164563)
Theater of Pain: Raging Bloodhorn (id 170850)
Plaguefall: Decaying Flesh Giant (id 163882)
