I was questing in Darkshore and took a detour to finish a different quest and now it wants me to go pick up a quest 7lvls higher and I can't get it due to lvl requirements.

Questie doesn't "want you to pick up a quest". You're most likely talking about AAP and you can skip a quest with /aap skip.
