I have never delved into modding minecraft, so I have no idea how difficult this might be.... but:

My suggestion is to have a ui that pops up when you press a keybind that lets you click an advancement to craft the trophy for it. You will only be able to craft the ones you achieved and the cost could maybe be the trophy material (gold. emerald, iron, etc.) and the trophy display item.

This would replace the current system of giving trophies directly to your inventory (or the collector thing), allow players to recraft trophies they might have lost, and allow players to craft them when they want them.

Nice suggestion, I will work on this and maybe have an update in within the next few weeks as I am quite busy at the moment.
