You need to use qouteall's fork of Sodium, available from the Immersive Portals curseforge page https://www.curseforge.com/minecraft/mc-mods/immersive-portals-mod

Any way around sodium breaking optifine? No, they are fundamentally incompatible as they both significantly change the rendering pipeline. See https://gist.github.com/LambdAurora/1f6a4a99af374ce500f250c6b42e8754 for a list of mods with features to replace those Optifine provides.
