Is this caused by SnowyLeavesPlus?
Or might this mod be incompatible with "Fabric Seasons" mod?

Does this occur when launching or when entering a world? I assume the latter?

Also I think this is a problem with fabric seasons, because afaik that's the one that is not providing the proper information needed

Until now it happend only once and after a few seconds after I entered the world and flew a short range in creative mode.
I haven't tried do reentering the world again to see if the world is still loadable but I think this problem is small enough to just accept this issue once in a while. However it would be cool to have both mods compatible together because as i know the seasons mod does not add leaves getting white.

I tried but it's not possible to properly proceed with a null value. I guess it's fair to assume that something wrong went with the game itself and it should crash anyways??
