Can someone help me figure out how to make invasions happen every night? I can't figure out how to change the config. Any help appreciated.

Set the "Consistent Invasions" game rule to true for your world, alternatively you can set the "overrideGameRules" config option and the "consistentInvasions" config option in common config to true to achieve the same effect, but across every world. After that you'll want to go in your dimension config folder and go into the overworld level config. Then set the "nightInvasionRarity" config option to 1.
