In the ingame settings, most of the options are locked, do you know why?

Hey, thanks for reporting. Could you share your config/treechop-common.toml and a log file? And a screenshot of the locked settings? Hopefully it's just a config issue, which can be fixed by deleting the treechop-common.toml on the server. More likely something went wrong with the networking stuff though.
