Egusi soup with fufu
Creamy, nutty egusi soup is a staple in homes and bukas, or street food stalls, across Nigeria and in many parts of West Africa. The soup takes its name from egusi, or agushi―the seeds that both thicken and flavor it.
The cooking process:
Traditionally, Egusi is eaten not with a spoon, but with the help of fufu.
Fufu is a thick porridge (dough) of boiled cassava, yams, sweet potatoes or plantains crushed in a mortar.
Fufu is rolled into small balls and swallowed whole, eaten instead of bread with soup or sauce. Fufu is a traditional dish of the peoples of Western and partly Central Africa, especially popular in Ghana and Nigeria.
