ATH only displays the ones they miss, but I personally like to have all the achievements complete. Is it possible to have an option to display the missing trainers?

You seem to be asking if you can show Things that you have already completed? And if so, you definitely can! The first page of ATT Settings allows you to toggle those options.

You can also open the Achievement by itself into a window to see all the pieces you may be missing otherwise: /att achID:13274 or /att a:13274
