Archaeology is no longer anywhere in the collection categories, nor can it be found under any of the dynamic categories.

Archaeology should show under Dynamic Profession > Archaeology. If you can't see it there, perhaps your current character doesn't know Archaeology and it is being filtered.
The actual Sources for it are now based on expansion and found under Expansion Features > Profession.
